Roasted Carrot & Feta Salad Recipe

Ingredients (4 servings)

  • 4 Carrot (large, peeled and roughly chopped)
  • 1 tbsp Extra Virgin Olive Oil
  • Sea Salt & Black Pepper (to taste)
  • 3 tbsps Tahini
  • 2 tsps Raw Honey
  • 1 Lemon (medium, juiced)
  • 6 cups Mixed Greens
  • 1/2 cup Feta Cheese (cubed)

Instructions

  1. Preheat the oven to 425ºF (220ºC) and line a baking sheet with parchment paper.
  2. Place the carrots on the baking sheet. Toss with oil and season with salt and pepper. Bake in the oven for 25 to 30 minutes or until cooked through and browned, shaking halfway through.
  3. Meanwhile, in a bowl whisk together the tahini, honey, and lemon juice. Season with salt and pepper. Whisk and add a splash of water if the dressing seems too thick.
  4. Place the mixed greens into the serving plate. Top with roasted carrots and feta cheese. Drizzle with tahini dressing and enjoy!
