Crockpot Three Bean Veggie Chili

What goes better with Fall and Football than a warm bowl of crockpot three bean, veggie chili? I am pretty sure that answer is NOTHING! Get ready to quickly chop, pour and season your way into a simple recipe that hits the spot for all of your guests- even the vegetarian and vegan ones! As a family, we are spending time at middle school football games, baseball games, and watching sports from our comfy couch. When we return home from a day full of sports, having dinner ready is so nice.

Ingredients for Crockpot Three Bean Veggie Chili

You know by now, I am not trying to tell you a long story, I just get to the ingredients and the instructions so you can make this chili right now! Ready? Let’s go!

1 medium onion, chopped (approx. 2/3 cup)
1 red or yellow bell pepper (or ½ cup chopped assorted mini bell peppers)
½ cup chopped carrots
1 (15 oz) cans black beans
1 (15 oz) cans red kidney beans
1 (15 oz) cans pinto beans
1 (15 oz) cans tomato sauce
1 (15 oz) cans petite diced tomatoes
3 tsp. chili powder
1 tsp. cumin
1 tsp. salt
1 avocado
Optional: small jar deli-sliced jalapeño peppers, drained

Canned food questions

Many of my coaching clients ask about canned food and if it is okay to consume. There are a couple of schools of thought and I believe in canned food only on occasion. I always rinse the veggies before I prepare them. If you have the option to buy organic, make that choice. If you have time and energy to cook dried beans, that would always be my preference as you control the ingredients and seasonings.

Instructions

1. Chop onion, peppers, and carrots. Rinse and drain beans.

2. Put all ingredients in crockpot and cook on low for 6+ hours or on high for 4+ hrs.

3. Add salt & pepper to taste.

4. Add more chili powder and jalapeño peppers if you like heat.

5. After 6 hours, spoon out, top with jalapenos, and serve with organic tortilla chips.
